Timeline March 2014 - November 2014

Highlights and Achievements The most massive operation I've ever managed with an average of 8k - 12k meals served and approximately 35 employees scheduled per day. Efficiency was vital to develop new menus and remain effective. My organization and ability to prioritize was polished during this time. I was successful by instilling new system processes and streamlining communication across all stations, also, reducing the amount of motion and conveyance, 5S workstations, and reviewing process interdependencies. As a result, workflow and morale were significantly improved and was ultimately the catalyst to allow chefs freedom to focus their creativity on the food.

Memorable Moment Summer of 2014, executing an annual event in Wisconsin spanning three days serving over 8K people per day. During this whirlwind, I experienced every range of emotion as I was determined to support and manage half a dozen satellite kitchens in 90-degree weather.
